Cajun Stuffed Spinach Chicken Breast Recipe
2-3 chicken breasts split in the middle
- 4 tbsp butter divided into 2 tbsp
- Cajun seasoning or Creole seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp smoked paprika
- 1 tbsp Italian seasoning
- 1 tsp parsley
- 1 tbsp garlic minced 3 cups or handfuls of fresh spinach
- 3/4 cream cheese (Take 1 – 8 oz pack and cut 3/4) Use the remaining 1/4 for mashed potato recipe.
If making 4 chicken breasts use the entire 8 oz package. salt if necessary black pepper to taste cheese blend any preferred
- Mashed Potatoes
- 5-6 medium potatoes
- 1/4 cream cheese
- 3 tbsp Butter
- salt to taste
- black pepper to taste
- 1/4 cup heavy cream

Preheat the oven to 350F
Place a slit in the middle of the chicken breast.
Add a small drizzle of oil to the chicken breast.
Using the ingredient list above combine the first 8 dry seasonings together.
Season the chicken thoroughly on all sides.
Using a skillet add a small amount of oil and 2 tablespoons of butter.
Add garlic and cook until fragrant.
Add the fresh spinach, salt, and black pepper.
Remove the spinach mixture and set it aside.
Combine both the cream cheese and spinach mixture.
Add cheese blend along with Italian seasoning.
Add a sprinkle of paprika for color and combine Stuff the chicken breast with the filling, using toothpicks or skewers to secure.
Add butter and oil to the skillet and brown the chicken on both sides.
Place the pan in the oven and allow the chicken to bake for about 20 minutes.
