Healthy Dinner Recipes Cod Gratin With Leeks and Chorizo Plus Healthy Side Dishes

We find ourselves today with a new idea for cooking fish as dinner healthy food recipes!

 

I love associating cod with chorizo, as on for a recipe for cod back in chorizo crumble and parmesan, and I know that it is also very good with leek so when I saw this gratin in the book “Healthy Dinner Recipes” I immediately wanted to try it… and I did well because it is delicious!

 

So I share this recipe to which I have made some slight modifications, as well as my favorite for this book that changes quite a bit from the usual cookbooks. And even if “I already know how to cook” I really appreciated it, especially on its presentation. I’ve put a page as an example below.

 For each type of dish: gratin, lasagne, soup, stews, quiches etc…. find 4 variations! Enough to get a lot of ideas and to find a healthy dinner ideas to your taste.

Ingredients: (for 4 persons)

  • 500g of cod (or other white fish) back or back
  • 1 shallot
  • 3 leek whites
  • 60g of chorizo
  • 25cl of liquid cream
  • 40g grated parmesan cheese
  • olive oil
  • salt, pepper

Preparation:

1.    Peel and mince the shallot. Finely chop the leek whites.

2.    In a frying pan, heat a drizzle of olive oil and fry the shallot for 2-3 minutes.

3.    Add the sliced leeks and a trickle of water and continue cooking for 5min.

4.    Preheat the oven to 180°C.

5.    Meanwhile cut the chorizo into small cubes, add them to the frying pan with the cream, salt and pepper and continue cooking for 5 minutes.

6.    Place the fish in a gratin dish, cover with the previous preparation and sprinkle with grated Parmesan cheese.

7.    Put in the oven for 25min.

8.    Serve with rice, semolina or pasta.

Healthy Side Dishes Pan-fried zucchini with feta cheese

Today I propose you a very simple and quick healthy dinner recipe to cook zucchini in season! With the move (which is taking place today) I didn’t have too much time to cook nor to take care of the blog because a lot of boxes to prepare but also a lot of painting to do in the new house! I organized myself as well as possible in order to be able to propose you in spite of everything new recipes.

 

As I love feta cheese, I slipped some into my pan of zucchini, a drizzle of lemon juice and a bit of basil, not forgetting the red onion which I also love… it didn’t take much more than that to delight me !

Ingredients: (for 4 persons)

  • 2-3 zucchinis (800 to 900g)
  • 1 small red onion
  • 80g of feta cheese
  • ½ lemon (optional)
  • a few basil (or mint) leaves
  • olive oil
  • salt, pepper

Preparation:

1.    Cut zucchini into cubes or sticks. Peel and finely chop the onion. Chop the basil.

2.    In a large frying pan, heat a drizzle of oil and fry the onion for a few minutes.

3.    Add the zucchini, basil and a dash of lemon juice if desired, mix and cook covered for about 10min. The zucchini should remain a little crunchy at the heart (unless you prefer melting in this case prolong the cooking time).

4.    Serve the zucchini with the crumbled feta cheese.

The pan-fried dish can be eaten hot as an accompaniment to poultry or fish but also cold to accompany grilled meats for example.
