Let’s finish our Easy Healthy Dinner Recipes the last zucchini in the garden with a warm and comforting dish… So I suggest you these delicious zucchini and ricotta lasagna!


An easy and healthy dinner recipes that changes from lasagna to meat and allows children to easily eat vegetables.

Ingredients: (for 4 persons)

  • 6 sheets of lasagne
  • 2 medium sized zucchini (about 500g)
  • 2 cloves of garlic
  • 400g of tomato coulis
  • 1 teaspoon of Italian spice blend
  • 150g of ricotta cheese
  • grated Swiss cheese or Parmesan cheese
  • olive oil
  • salt, pepper


  1. Preheat the oven to 180°C.
  2. Grate the zucchini (I use the Fresh express from Moulinex very practical and efficient), peel and chop the garlic cloves.
  3. In a frying pan, heat a drizzle of olive oil and fry the garlic quickly and then add the grated zucchinis. Continue cooking for 2-3 minutes.
  4. Add 3/4 of the tomato sauce, spices, salt and pepper and simmer for 10 to 15 minutes. At the end of cooking, add the ricotta and mix well.
  5. In a dish a gratin (or like me 2 smaller dishes) pour a little tomato sauce at the bottom and then assemble the lasagne: lasagne sheet then stuff ricotta / zucchini then lasagne sheet then stuffing and finally lasagne sheet then a layer of tomato sauce and finally a little grated cheese.
  6. Bake 40min for a family dish or 30min if smaller dishes (as in my photos).

Ingredients: (for 2 persons)

  • 1 onion
  • 1 small zucchini (about 250g)
  • 1 bell bell pepper
  • 100g of rice (here semi-complete rice)
  • 50g of chorizo
  • ½ chicken or vegetable stock cube
  • 1 small can of tomato paste (70g)
  • 1 cc of turmeric
  • olive oil
  • salt, pepper


  1. Peel and finely chop the onion.
  2. In a large frying pan, heat a drizzle of olive oil and fry the onion for a few minutes.
  3. Meanwhile, cut the zucchini and bell pepper into cubes.
  4. Add the vegetables and continue cooking for 5 minutes.
  5. Cut the chorizo into small pieces.
  6. Add the rice, chorizo, turmeric, tomato concentrate, half a crumbled stock cube, then cover with water to the height, add a little salt and pepper.

Stir then let cook for about 20 minutes without covering, stirring occasionally. It is cooked when the liquid dinner healthy food recipes is absorbed and the rice is tender (time varies according to the type of rice, for wholemeal rice the cooking time will be longer and conversely for white rice).
