I propose you a new healthy dinner recipe to cook the last zucchini (you see how hard it is for me to switch to autumn mode there? there are only 2 zucchini recipes left after I promised I’ll get started!).

 

The zucchini and Boursin alliance is just crazy healthy dinner recipes !  I don’t think you’re going to contradict me in view of the recent success of my Boursin shell risotto recipe which has been a hit since its publication! Today I offer you a delicious crumble that will go particularly well with poultry and fish (and also barbecues, which are out of season is quick healthy dinner also.

Ingredients: (for 4 persons)

  • 2 medium zucchini
  • 100g of boursin cuisine
  • 40g of flour
  • 40g of soft butter (preferably half-salt)
  • salt, pepper

Preparation:

  1. Cut the zucchinis into small cubes and fry them for about ten minutes in a lightly oiled pan. At the end of cooking, add the boursin cuisine, salt and pepper.
  2. At the same time, preheat the oven to 180°C.
  3. Meanwhile prepare the crumble, mix the flour and butter cut into small pieces with your fingertips to obtain a sandy textured dough.
  4. Pour the zucchini into small casseroles or casseroles then spread the crumble.
  5. Bake for about 25 minutes so that the crumble is golden.

Blanquette de Poulet is healthy dinner recipe and one of my favorite recipes on the blog, a real treat for the whole house.

 

Having already made it several times in traditional mode and also in the Magimix expert Cook (which I no longer have), I wanted to test it with the Cookeo I recently got to see if it works well too as healthy dinner ideas… and yes, another treat!

 

I therefore give you below the procedure to follow in the Cookeo, for the recipe in the casserole or in the Cook-expert.

Ingredients: (for 4 persons)

  • 800g of chicken fillet
  • 1 large onion
  • 2 carrots
  • 200g of button mushrooms
  • 2 bay leaves
  • 30g of cornstarch
  • 25cl of white wine
  • 20cl of water
  • 1 chicken stock cube
  • olive oil or butter
  • salt, pepper
  • 20cl of liquid cream
  • 2 egg yolks

Preparation:

  1. Cut the chicken into cubes. Peel and cut the carrots into thin slices. Brush the mushrooms and cut them into slices. Peel and slice the onion.
  2. In the Cookeo vat melt the butter or heat a drizzle of olive oil and fry the onion in “browning” mode.
  3. Add the chicken and brown quickly.
  4. Pour the white wine and let evaporate.
  5. Then add the rest of the ingredients except the cream and egg yolks, cook “under pressure/quick cooking” for 10min.

Mix the cream and egg yolks, pour into the cookeo bowl and leave to thicken for about 2min in “browning” mode (during the preheating time this is not a problem). I hope you like this healthy dinner recipes.
