This breakfast casserole is light and airy, and it just takes a few minutes to prepare. It’s the ideal recipe to put together the night before, store in the fridge overnight, and bake the next morning.

It’s also great for entertaining because it serves 12 people. With a side of fruit or bread, you’ve got yourself a nutritious, filling breakfast that everyone will enjoy!

The breakfast casserole will bake evenly and firm up precisely if you layer it correctly. Start with a layer of breakfast sausage patties.

Then add tomatoes and avocados, followed by a thick layer of egg and hash browns, and last, melted cheddar cheese.

We like to slather sour cream and salsa or sliced tomatoes on top of our breakfast casserole pieces.
The idea of avocado being cooked makes you uncomfortable.

Don’t worry about it. It’s delicious! If you must leave it out of the casserole and only want to use it as a garnish, that is also a delicious choice.

The egg and hash brown combination becomes lighter and fluffier when a cup of milk is added to the recipe. But we’ve done that before and it’s worked out great.
If your casserole is still runny after baking, it’s probably because you didn’t thaw the hash browns before cooking.

You can absolutely use frozen hash browns if you make the mix the night before; they will thaw out in the fridge overnight. If you’re making it the day before, make sure your hash browns are thawed before assembling the casserole.
